These days, Defiance is just about the closest thing eastern Missouri has to wine country.  It's a very picturesque place, in fact, but it's also host to a whole lot of corn.  And bugs.

Iceboxes would have been common in homes at the time, but springhouses were an old-fashioned, rural means of refrigeration.  Usually they were small stone buildings constructed on top of running water, which kept the interior of the building cool.  Here's a photo of one on the Daniel Boone property in Missouri.
